Echinacea
Echinacea is an herb found in region of North America. It contains several chemicals which include polysaccharides, glycoproteins, alkamides, volatile oils and flavonoids. Most people these days have heard of vitamin C, but sailors on long voyages 250 years ago could have done with a tip-off. As their vitamin C-rich fruit and veg supply perished, they began to suffer from the vitamin-deficiency disease scurvy, which caused bleeding gums, lost teeth, wounds that wouldn't heal and eventually death. Vitamin C, also known as ascorbic acid, is our body's main antioxidant, protecting our cells from damaging free radical molecules and reducing our risk of heart disease and strokes. As free radicals can cause the DNA damage that leads to cancer, researchers are investigating the effect of vitamin C on reducing the risk of the disease, particularly stomach cancer. Certain foods, such as cured meat, can form cancer-causing chemicals in the stomach, but research shows when vitamin C is present it inhibits them. A study by the San Francisco VA Medical Center found the lower a person's level of vitamin C, the greater the chance they will become infected with the bacteria that can cause peptic ulcers and stomach cancer.

In an American study of people over 65 years old, the group who took 500mg of vitamin C and 400iu of vitamin E daily were 78 per cent less likely to show signs of Alzheimer's than those who didn't.

But because it's water-soluble, the body can't store vitamin C and any excess taken in is excreted in your urine. We can't make our own vitamin C either - a disadvantage we share with guinea pigs, the great apes and fruit bats - so get munching on rich sources (below). Remember, this super-vit is easily destroyed by cooking, so steaming or stir-frying veg will help ensure you get enough.

Vitamin C-rich foods help you absorb the iron from vegetarian sources such as beans, lentils and dried fruit - particularly useful if you are vegetarian. The iron from these foods is harder for the body to absorb than iron from animal sources.



The recommended intake of vitamin C is 40mg for health maintenance, but the British Dietetic Association suggests an optimum daily intake of 200mg. In the last trimester of pregnancy requirements rise to 50mg, and to 70mg during breast-feeding, while smokers need 120mg per day.
